

Sergio Castro
Executive Chef
Sergio was born in Peru where his love for cooking began by the inspiration
of his mother. Her magical way with strong, bold, spices and flavors
is something that Sergio incorporates in every dish. His passion for
cooking was the motivating force behind relocating to the states in
1989 to further his education and start his career. Broward Convention
Center and The Bimini Boat Yard, in Fort Lauderdale, Florida is where
he was exposed to the finer side of dining and perfecting his craft.
In 1992 he moved to Boston where he worked at a Portuguese Restaurant
while attending Newberry College studying Culinary Arts, after graduation
he went to work at the Burlington Marriott in Boston, MA. Five years
had passed and Sergio had the opportunity to consult the opening of
two restaurants in the Lake Toxaway/Cashiers area, later he moved on
to become the Executive Chef at The Library in Cashiers for 2 ½ years.
In such a short period of time in the south, Sergio, has developed a
great reputation for himself and a following like no other, the obvious
next step was to open a place of his own, which is exactly what he did,
Sergio’s Bistro, for 4 year’s, was Lake Toxaway’s home away from home.
In March of 2007, Sergio was informed; through a friend that The Quarry
was in full construction mode, set to open on May 3rd and need of an
Executive Chef. Despite the saw dust Sergio looked at the menu, saw
the potential and knew this is where he needed to be. The Quarry’s agreed
and this has been a perfect match ever since. The menu comprised of
American cuisine with a Peruvian flare, has really given Sergio the
freedom to be creative and the opportunity to incorporate some of his
Peruvian roots and most of all his mother’s home cooking.
