Nineteen years ago, Tracey started as a hostess and cocktail waitress
during the summer breaks from college in a town called Huntington on
Long Island, New York, where Tracey was born and raised with her sister
Tiffany.
Getting a small taste of the business at such a young age, once graduating
Johnson & Wales University in Providence RI, she moved to Atlanta where
she worked as a hostess and a server for extra money while trying to
decide if she wanted to utilize her advertising degree. The decision
was obvious; two years later she had an opportunity to move to New York
City where she added traveling and bartending to her resume.
August 2002, she moved back to Atlanta, to be closer to family who had
relocated to the Atlanta area, and within four years she went from Server
to Assistant Manager to General Manager. Taking a break from the restaurant
business in 2005, Tracey went on to work at catering company, learning
how to book events large and small, organize staff for off premise parties
and working closely with the host of the event to ensure the perfect
party.
In 2006, on a trip to Long Island with her father to visit his mother,
they toyed with the idea of one day opening a restaurant with a piano
bar. They spent the rest of the trip throwing ideas back and forth,
visualizing how great it would be if the opportunity presented itself,

and sure enough, February 2007 Tracey was packing her bags and heading
to Brevard, North Carolina where she now resides and oversees the full
operation of The Quarry.
Tracey has had many jobs over the years, in many different types of
restaurants and has always had a love for casual fine dining. "It's
upscale enough to have great tasting food with beautiful presentation,
a quality wine list, and professional service accompanied by an atmosphere
that is elegant yet casual enough that you feel comfortable in either
a pair of jeans or a three piece suit."
As a child and throughout her life she has always had a desire to one
day own her own business. Career driven and family oriented, opening
a restaurant with her father is a dream come true. "It is a passion
that is unexplainable; it's hard work, very long hours, and rewarding
all at the same time."
